Fish Curry

Ingredients:
8 – 10 pieces of fish cutlets each piece about 1 inch thick
1 Tsp Turmeric powder
1 tsp salt
For paste:
2 Tbsp Red Chili Powder
3 Sliced Green Chili
1 Tsp Cumin Seeds
1 Tsp Coriander Seeds
2 Tsp Cumin Seed Powder
2 Tbsp Yogurt
Salt to taste
1 Large chopped Onion
1/2 Inch piece of Ginger
2 Pods (chopped) Garlic
3 Bay Leaf
1/2 Cup Cooking Oil
Method:
1. Rub the fish cutlets with one tea spoon each of salt and turmeric powder and mix thoroughly.
2. Grind to a fine paste coriander & cumin seeds, red chili and ginger adding little water in an electric grinder.
3. Heat 1/2 cup oil and fry the fish cutlets in a non stick frying pan. Turn each piece and fry till brown. Remove the fish cutlets and set aside.
4. In the same oil add bay leaf and finely chopped onion and garlic and fry to light brown. Add the ground spices, green chili and cook for three minutes. Add salt. Add two table spoon of yogurt/curd and fry till starts to stick to the pan. Stir occasionally. Put 3 cups of water and bring to boil.
5. Add the fish pieces into the gravy. Reduce heat and simmer for at least eight to ten minutes till gravy becomes thick.
6. Serve hot with rice.

Ingredients:
1 Kg of Fish of your choice (cutlets or whole)
2 bunches of coriander
1 inch of fresh ginger
2 – 4 Green chillies
1 large onion sliced
1/2 lemon
2 table spoons of mustard oil for rich flavour
Banana leaf for wrapping for best results (can be replaced by aluminium foil)
Salt to taste
Method:
After cleaning the fish, rub it with salt.
Grind coriander, ginger and chillies to make a paste and combine with mustard oil.
Marinate the fish with the paste for 10 minutes. Put the marinated fish over a banana leaf, add coarsely chopped onion and squeeze lemon over the fish.
Wrap the fish with a string. Steam for 20 minutes to half an hour. Serve hot with rice.

Yield: 16 Servings
2 c flour
3 T sugar
1 T baking powder
1/4 t garlic salt
1/4 t onion salt
1/4 t salt
1/4 t baking soda
1 ea egg
1/2 c sour cream
5 T vegetable oil
1/4 c milk
2 c sharp cheddar cheese
-Shredded
In a large bowl, combine all dry ingredients.
In another bowl, mix together eggs, sour cream, oil, and milk and mix well. Stir in cheese.
Add to dry ingredients, all at once, and stir just till all is moist. On a floured surface, knead dough 7 or 8 times. Divide dough in half. Pat 1/2 of dough into an 8″ circle, about 1/2″ thick, on a greased baking sheet. Cut into 8 wedges. Repeat with last half of dough.
Bake in a 375 oven for 15 to 18 minutes or until golden brown. Immediately recut wedges to separate. Serve warm with chili or casserole.

Method:
Take four tea-cups full of arrow root, and dissolve it in a pint of cold milk.
Then boil another pint of milk with some broken cinnamon, and a few bitter almonds or peach-leaves.
When done, strain it hot over the dissolved arrow root; stir it to a thick smooth batter, and set it away to get cold.
Next, beat six eggs very light, and stir them into the batter, alternately with a quarter of a pound of powdered white sugar.
Add a grated nutmeg and some fresh lemon-peel grated.
Put the mixture into a buttered dish, and bake it an hour.
When cold, cut some slices of preserved quince or peach, and arrange them handsomely all over the top of the pudding; or ornament it with strawberries, or raspberries preserved whole.

Ingredients:
1/2 lb. of pearl barley,
1 lb. of apples,
2 oz. of sugar,
1/4 oz. of butter,
the grated rind of a lemon.
Soak the barley overnight, and boil it in 3 pints of water for 3 hours.
When quite tender, add the sugar, lemon rind, and the apples pared, cored, and chopped fine. Pour the mixture into a buttered dish, put the butter in bits over the top, and bake for 1 hour.
