Soup Recipe – Cabbage and Bacon Soup

Take

1 Cabbage,
1 lb. Bacon,
1 doz. Peppercorns,
2 Turnips,
1 Carrot,
1 Onion and
Pieces of Bread

This soup is not as expensive as it appears, for the bacon is served as a dish of meat, either after the soup or cold for breakfast or tea. Put two quarts of water into a saucepan; when it boils put in a pound of bacon neither too lean nor too fat. Let it boil slowly for one hour.

The bacon must be well washed and scraped before cooking, and when it boils skim the pot thoroughly. Well wash the cabbage and soak it in hot water for half an hour.

Take all the water away and put the cabbage into the saucepan with the bacon and vegetables cut up, and the peppercorns tied in a piece of muslin; let them simmer together for two and a half hours, take up the cabbage, and cut it into quarters.

Take one quarter and cut it into small pieces and put it into a soup tureen. Cut some stale pieces of bread into thin slices and lay on the top, pour over the boiling liquor, and serve.

Dish the bacon, pull off the rind, and put the rest of the cabbage round the dish.

Crock Pot Recipe – Black Eyed Peas

No, no, no this is not a tribute to the band black eyed peas.

It is one of the favourite recipes contributed.

1 16 oz bag of dried black-eyed peas
1 small ham hock
1 14 1/2 oz can of diced tomatoes with jalapenos
1 14 1/2 oz can of diced tomatoes with mild green chiles
2 10 1/2 oz cans of chicken broth
1 stalk of celery, chopped
salt and pepper to taste (it doesn’t need much, if any)

Pre-soak black-eyed peas according to the instructions on the bag. Combine all ingredients and cook on low for 8-10 hours.

Serve on New Years Day for good luck!

Slow cooked black bean chili with pork

1 lb. boneless pork, cut into cubes
2 (16 oz.) cans black beans, drained
1 red or yellow bell pepper, chopped
1 med. tomato, peeled, seeded and chopped
1 sm. red onion, thinly sliced
1 clove garlic, crushed
1/2 t. ground cumin
2 t. chili powder
1/2 t. salt
1 can tomato sauce
1/2 c. sour cream
2 T. chopped cilantro

In a crockpot, stir together pork, beans, bell pepper, tomato, onion, garlic, cumin, chili powder, salt, and tomato sauce. Cover and cook on low 8 to 9 hours. Spoon into bowls and top with sour cream and cilantro.

Best slow cooked pork roast recipe

4-5 pound pork roast
6-8 cloves garlic
pepper
basil
1 c dry white wine
onion

Cut 6-8 holes into the roast just big enough to fit a clove of garlic. Put a garlic
clove (peeled) into each hole. Rub outside with cracked pepper and basil. Pour dry white wine in the bottom of the Crock Pot.

Place roast in the Crock Pot, put slices or wedges of onion on top and around the roast.

Cover and cook on low all day or until done.
If desired you can also place potatoes and carrots in the bottom of the Crock Pot, but I usually serve either mashed or baked potatoes and a steamed veggie on the side.

Don’t forget a nice fresh loaf of bread to go with it too :)

Slow Cooker Barbecued Pork Short Ribs

2 c. water
3 or 4 lbs. boneless short ribs
18 oz. bottle barbecue sauce
1 tbsp. Worcestershire sauce
3 oz. Heinz 57 hickory smoke sauce
1/4 tsp. angostura
1/4 tbsp. lemon pepper seasoning

Combine water, barbecue sauce, Worcestershire, Heinz 57 sauce, angostura, lemon pepper and short ribs in crock pot on low heat for 12 hours.

I usually cook this recipe overnight.
