Soup Recipe – Clear Soup

Ingredients needed are:

1 large Spanish onion,
1 teaspoonful of mixed herbs,
1/2 head of celery,
1-1/2 oz. butter,
1 carrot,
1 turnip, and
pepper and salt to taste.

Chop the onion up fine, and fry it brown in the butter, in the saucepan in which the soup is to be made, and add 5 pints of water. Prepare and cut into small pieces the carrot, turnip, and celery; add these, the nutmeg, herbs, and pepper and salt to the water, with the fried onions.

When the vegetables are tender drain the liquid; return it to the saucepan, and boil the soup up.

Winter vegetable soup

Ingredients:

3 turnips scraped and sliced
3 carrots scraped and sliced
3 onions peeled and cut.
Bunch of celery
3 leeks cut in pieces
One clove of garlic
2 stalks of parsley
2 cloves
1/2 teaspoon nutmeg
½ teaspoon of pepper
Salt to taste
2.5 litres water

Method:

1. Heat butter in a saucepan. Fry turnips, carrots and onions until light brown.
2. Add celery and leeks and stir for 5 to 6 minutes. Add garlic, parsley, cloves, salt and pepper and nutmeg. Cover with the water and simmer for 2 hour.
3. Blend in a food processor.
4. Add Croutons while serving.

Thai chicken noodle broth

1 litre chicken stock
2 cups of water
3 com fresh ginger
1 red thai chilli finely chopped
400g chicken breast fillet, sliced thinly
400g rice noodles
1 tablespoon fish sauce
1 tablespoon palm sugar grated
1 tablespoon lime juice
2 buk choy quartered
few thai basil leaves

Method:

1. Combine stock, water, ginger and chilli in a large saucepan; cover and bring to boil. Reduce heat and simmer for 5 minutes. Add chicken, noodles, sauce, sugar and juice. Simmer for 5 minutes and chicken is cooked through and noodles are tender.

2. Add buk choy and simmer for a minute.

3. Sprinkle with basil before serving.

Cream of chicken soup

Ingredients:
2 liters of water
1 liter chicken stock
1.5k whole chicken
1 carrot coarsely chopped
1 brown onion coarsely chopped
30 gms butter
1/3 cups plain flour
2 tablespoons lemon juice
1/2 cup cream
1/4 cup finely chopped parsley

Method-

1. Place the water and stock in a large pot with chicken, carrot and onion; bring to boil. Reduce heat and cover; simmer for 1.5 hour. Remove chicken from the pot; cover & simmer broth for 30 minutes.

2. Strain broth; discard solids. Remove and discard chicken skin and bones. shred meat coarsely.

3. Melt butter in a large saucepan; add flour; cook, stirring, until thickens. Gradually stir in broth and juice; bring to boil, stirring. Add cream, reduce heat, simmer uncovered for 20 minutes. Add shredded chicken.

3.Serve bowls of soup sprinkled with parsley, accompanied with your favorite bread toasted.

Soup Recipe – Corn Soup

1 breakfast cupful of fresh wheat,
1 quart of water,
1/2 pint of milk,
1/2 oz. of butter,
1/2 oz. of finely chopped parsley,
1 oz. of eschalots,
Seasoning to taste.

Steep the wheat over night in the water and boil it in the same water for 3 hours, add the butter, the eschalots, chopped up very fine, and pepper and salt. Let the whole simmer very gently for another 1/2 hour, add the milk and parsley boil the soup up once more, and serve.
