Cream of chicken soup

Ingredients:
2 liters of water
1 liter chicken stock
1.5k whole chicken
1 carrot coarsely chopped
1 brown onion coarsely chopped
30 gms butter
1/3 cups plain flour
2 tablespoons lemon juice
1/2 cup cream
1/4 cup finely chopped parsley

Method-

1. Place the water and stock in a large pot with chicken, carrot and onion; bring to boil. Reduce heat and cover; simmer for 1.5 hour. Remove chicken from the pot; cover & simmer broth for 30 minutes.

2. Strain broth; discard solids. Remove and discard chicken skin and bones. shred meat coarsely.

3. Melt butter in a large saucepan; add flour; cook, stirring, until thickens. Gradually stir in broth and juice; bring to boil, stirring. Add cream, reduce heat, simmer uncovered for 20 minutes. Add shredded chicken.

3.Serve bowls of soup sprinkled with parsley, accompanied with your favorite bread toasted.
