We need:
1 1/2 cups dried chick peas, soaked overnight
1 or 2 bay leaves
1 tea spoon ground turmeric
salt to tase
2 teaspoon oil
2 large onions, finely chopped
3 cloves of garlic, chopped
1 table spoon grated ginger
1 1/2 spoon garam masala
2 large ripe tomatoes, chopped
1 green chilli, chopped
1/4 cup chopped fresh mint leaves
Rinse the chick peas with water and place in a saucepan with bay leaves & turmeric. Cover with water and bring to boil. Simmer till almost tender. Add salt & cook until done. Drain & reserve liquid.
In a heavy pan, heat oil & saute onion. Add garlic & ginger over low heat, stirring frequently until golden brown. Add garam masala, tomatoes, chilli, drained chick peas & half the mint; stir well. Add 1/2 cup reserved liquid, cover & simmer until tomatoes reduced to puree. Sprinkle with remaining mint.
Serve hot with rice & roti (Indian bread).
