What you will need:

One big eggplant (200 gms)
One onion finely chopped
2 cloves of garlic finely grated
1 inch ginger finely grated
Oil to fry
Salt to taste
1 teaspoon brown sugar
1 tablespoon tamarind pulp
2 table spoon desiccated coconut
1/2 teaspoon turmeric
1 teaspoon chilli powder

Cut the eggplant lengthwise into thin strips. Cover with water and set aside for 5 minutes. Take the eggplant strips out of the water and pat dry with a paper towel.

Heat oil in a frying pan. Stir the eggplant for about five minutes on medium heat until it becomes soft. Remove from heat and set aside.

In another pan heat 2 table spoon oil. Add onion, ginger & garlic and saute until golden brown.
