What you will need:

1 small cauliflower
2 table spoon oil for frying
2 teaspoon panch phoran*
3 cloves garlic, chopped
2 teaspoon finely grated fresh ginger
1 teaspoon ground turmeric
salt to taste

(* Panch phoran - is an equal mixture of five spices; Fenugreek, nigella seed, Mustard seed, Fennel seed, Cumin seed - readily available from specialty Asian/Indian Shop)

Cut cauliflower into florets. Heat oil in a pan, add panch phoran until mustard seeds start to crackle. Add garlic, ginger & saute until golden brown. Stir in turmeric. Add cauliflower florets & fry, stirring occasionally, over low heat for few minutes. Add salt & about 1/4 cup water & steam for further 3 to 4 minutes until cauliflower is just tender.

Serve hot with Rice.
